THE CHEF

Leading the culinary journey at Fillets is Chef Randy, a visionary with over 16 years of experience across the United States and 13 years at the helm of Fillets in Bangkok. His deep understanding of Japanese cuisine — and his commitment to blending tradition with contemporary expression — defines the Fillets identity.

Chef Randy is supported by a team of talented young Thai chefs and experienced chefs from Japan, whose collective commitment to precision and creativity ensures that every visit delivers something extraordinary.
