Fillets, the first Japanese restaurant to introduce omakase dining in Thailand, has reopened at its new location in One Bangkok with the concept of An Anatomy of Taste Theatre. The restaurant features a modern and elegant design, breaking away from the traditional aesthetics of typical omakase venues. It showcases Japanese cuisine through two distinctive formats: Sushi Omakase and Modernist Kappo, using premium seafood imported directly from Japan. Fillets at One Bangkok offers both lunch and dinner, with set menus starting at 12 courses and going up to 18, along with optional wine and sake pairings.

Fillets first opened in Soi Lang Suan in 2012, founded by Chef “Randy” Chaichat Noprapa, who redefined the Japanese dining experience in Thailand. He moved beyond traditional sushi bars and standard menus to cultivate a dining culture guided by the chef’s creativity and the use of strictly seasonal ingredients. Word of mouth quickly spread, and Fillets became a phenomenon. At its peak, the restaurant had a waitlist of up to 400 guests, with some waiting as long as nine months for a coveted seat at the counter, an experience unlike any other in the country.

Sushi Omakase focuses exclusively on premium sushi, ideal for true sushi enthusiasts. For those seeking more variety, including raw dishes, grilled items, fried selections, soups, and sushi, Fillets offers a Modernist Kappo course in a relaxed setting. Here, guests can enjoy casual conversations with the chef and explore food pairings with wine or sake in a fun, interactive way. The restaurant’s beverage programme is curated by a seasoned French sommelier, ensuring a unique and expertly crafted selection.

Chef Randy was born into a family deeply rooted in the food business. After graduating from high school, he moved to Washington, DC, to further his education and gain hands-on experience at his family’s restaurant. It was there that he decided to pursue a bachelor’s degree in culinary arts. During his studies, he discovered a deep passion for the simplicity and depth of Japanese cuisine, which led him to begin his culinary career interning at Japanese restaurants. He trained under renowned chefs such as Hide Yamamoto at the Mandarin Oriental in Washington, DC, and Masaharu Morimoto, famed for his role on the TV show Iron Chef.

Recognising the growing appreciation for Japanese cuisine in Thailand, Chef Randy returned to Bangkok and opened Fillets. With his meticulous focus on ingredients and refined techniques, the restaurant quickly gained acclaim and became a must-visit destination.

With 13 years behind the counter at Fillets, Chef Randy understands that every omakase meal is a performance. The restaurant’s 24-seat circular counter offers a full view of the kitchen, allowing guests to witness every precise and artful step of preparation. The high ceilings and open layout create a sense of spaciousness, transforming each meal into a multi-sensory experience that engages sight, taste, smell, sound, and touch.

For those seeking privacy or hosting a group gathering, the restaurant also features a 14-seat private dining room.
